Closing Symposium 'Towards the Real Value of Fruit and Vegetables!'

Fruits and vegetables are healthy, it is well known. They are an important supplier of dietary fiber, vitamins and minerals. Yet most people still fail to eat enough of them. One reason for this is that there is little knowledge about the ingredients in fruits and vegetables and how these bioactive substances affect human health.

Therefore, more than very general advice to eat more vegetables is not possible. Behavioral research has shown that general advice, as opposed to personalized advice, has hardly any effect  In the top sector project "The Value(s) of Vegetables and Fruit"  four years of research was conducted by scientists, students and companies. This research has yielded surprising new insights about bioactive substances in fruits and vegetables.
